A grounding, mineral-rich soup that warms and deeply nourishes.


Ingredients

• Olive oil (1 tbsp)

• 1 onion, chopped

• 2 garlic cloves, minced

• 3 carrots, diced

• 2 celery stalks, diced

• 1 sweet potato, cubed

• 1 zucchini, diced

• 1 cup cooked lentils or chickpeas

• 6 cups vegetable broth

• Turmeric (1 tsp)

• Thyme (1 tsp)

• Salt & pepper

• Fresh parsley


Instructions

1. SautƩ onion and garlic until fragrant.

2. Add carrots, celery, sweet potato, and zucchini; cook 5 minutes.

3. Add lentils/chickpeas, broth, turmeric, thyme, salt and pepper.

4. Simmer 25–30 minutes.

5. Serve with parsley and a moment of gratitude.
