Ingredients
âą Olive oil (1 tbsp)
âą 1 onion, chopped
âą 2 garlic cloves, minced
âą 3 carrots, diced
âą 2 celery stalks, diced
âą 1 sweet potato, cubed
âą 1 zucchini, diced
âą 1 cup cooked lentils or chickpeas
âą 6 cups vegetable broth
âą Turmeric (1 tsp)
âą Thyme (1 tsp)
âą Salt & pepper
âą Fresh parsley
Instructions
1. Sauté onion and garlic until fragrant.
2. Add carrots, celery, sweet potato, and zucchini; cook 5 minutes.
3. Add lentils/chickpeas, broth, turmeric, thyme, salt and pepper.
4. Simmer 25â30 minutes.
5. Serve with parsley and a moment of gratitude.
