Roasted Vegetables

‱ Olive oil (1 tbsp)

‱ Salt & pepper


Vegan Béarnaise

‱ Soaked cashews (œ cup)

‱ Warm water (œ cup)

‱ Lemon juice (1 tbsp)

‱ Dijon mustard (1 tsp)

‱ Fresh tarragon (1 tbsp)

‱ Salt


Instructions

1. Roast mushrooms with tamari, oil, paprika — 20 min at 400°F.

2. Roast vegetables — 30–35 min.

3. Blend Béarnaise ingredients until smooth.

4. Plate beautifully and serve warm.
